Menu for Mars is an ongoing investigation into the potential dishes that may one day allow explorers to subsist on a Martian colony. For this workshop, Anna Dabney Smith and I demonstrated a Mars–viable version of Lahpet Thote, a Burmese fermented tea leaf salad.

This project is organized by Heidi Neilson and Douglas Paulson. The Menu for Mars Supper Club met monthly with guest experts over dinner to consider how the circumstances on Mars would affect colonists’ food – and their physical, cultural, and psychological needs. The Menu for Mars Kitchen culminated these discussions and related research.
